One Last Summer Cocktail: Seaward Colada

This cocktail was my sister Lauren’s specialty this past summer. It’s a great margarita alternative and can be enjoyed at cocktail hour or anytime during the day in the summer because, come on, it’s summer.

Before the fall officially comes in and we all start drinking pumpkin spice lattes and ciders and mulled wine, let’s have one last fruity and refreshing summer cocktail. Cheers to another summer that came and went too soon!

Seaward Colada

MAKES 6 SERVINGS

INGREDIENTS

1 lb frozen pineapple

8 ounces Vodka

Trader Joe’s Sparkling Coconut Water with Yuzu

Sprigs of mint, for garnish

Lime wedges, for garnish


DIRECTIONS

In a blender, puree pineapple with vodka until smooth.

Add ice to a rocks glass. Pour blended mixture over ice until the glass is about halfway full. Fill the remainder of the glass with the sparkling water and garnish with lime and mint.

Enjoy, preferably poolside!
